Many recipes will call for “1 cup of cubed sweet potatoes” or “1 cup of sliced sweet potatoes” or even “1 cup of mashed sweet potatoes” but it is not always easy to determine actually how many sweet potatoes are in a cup. In order to help make cooking easier we did some experiments to help tell you exactly how many sweet potatoes you need to buy.

To answer How many sweet potatoes in a cup we went to the grocery store to check out the produce section. After surveying the vegetable selection we discovered that 1 pound of sweet potatoes is equal to 2 large or 3 medium sweet potatoes. We decided to use a medium sweet potato for our measurements.

We found that it took 1.25 medium sweet potatoes to obtain 1 cup of sliced potato. When cubing, we needed 1.3 sweet potatoes to reach the 1 cup mark. However, when measuring for 1 cup of mashed, 2 whole sweet potatoes did the trick.

Today sweet potato fries are very popular in more trendy restaurants. When preparing sweet potato fries at home, it took 1.3 potatoes to result in about 1 cup.

Short Term Sweet Potato Storage

Do not store raw sweet potatoes in the refrigerator.

Keep unwashed sweet potatoes in a cool, dry location away from light to prolong shelf life; these are a good item to store in your pantry. They will keep for about 2 weeks.

Cooked whole or pureed sweet potatoes keep 1 week in the refrigerator.
